When a couple of young entrepreneurs came to us and wanted to open an eco-friendly restaurant in Saint Louis featuring fresh, locally-sourced salads, we happened to find them the perfect spot, right around the corner from our office. How convenient! Owners Nick and Sarah teamed with our own Sheila Miranda to create an atmosphere that evokes the freshness of the local farms that Green Bean features. The space is filled with bright greens and yellows, framed in reclaimed wood that we found on site in the original mezzanine. What a great reminder that healthy, sustainable food can be delicious, fast and so pretty, too.
